They should have left it that way. I just had Moules Frites. A huge pot of steamed mussels and onion with a plate of French Fries. And make no mistake: These were FRENCH French Fries! Nothing like the greasy dead potato things you get in North America! While those are DEEP fried until the cook is absolutely satisfied that even the last square millimeter of the poor potato has been saturated to the absolute limit with fat, the FRENCH French Fries don't seem to be DEEP fried at all. Somehow the fat cooks the outside and leaves something crispy behind, but the inside seems to be cooked by transmitted heat alone. No friggin wonder you have to look long and hard before you find a French person bloated like a hippo.
